Fresh fish, pineapple and colourful peppers come together in a sweet, tangy sauce. It is a bright, simple dish to serve with rice.

Ingredients

  • 2 tomatoes (cut into large pieces)

  • 1 slice bell pepper (cut into large cubes)

  • 2 capsicums (deseeded and chopped)

  • 1 large onion (cut into wedges)

  • 2 garlic cloves (cut into thin lengthwise strips)

  • 2 slices pineapple (chopped)

  • 1/2 cup chilli and garlic sauce

  • 1/2 cup tomato sauce

  • 2 cups any fresh fish (cut thinly into 1-inch pieces)

  • 1/2 teaspoon ginger (crushed)

  • 1 tablespoon soy sauce

  • 1/3 teaspoon ground black pepper

  • 1/2 teaspoon Ajinomoto

  • 4 green chillies (thinly sliced)

  • A little salt

  • A little oil

Method

  1. Put a pan on the stove and add a little oil.

  2. When the oil is hot, add the onion, capsicum, bell pepper and chillies.

  3. When the onion softens slightly, add all the remaining ingredients except the sauces, and fry them together.

  4. When fried, add the sauces.

  5. Adjust the salt to taste and take the pan off the stove.
