Passion fruit leaf and fish rice
Brown rice cooked without salt or oil, stirred with passion fruit leaves and reef fish.
This rice brings together finely chopped passion fruit leaves and reef fish with brown rice, onion and green chilli. It is a fresh, light dish that makes good use of leaves grown at home.
Ingredients
2 cups cooked brown rice (cooked without salt or oil)
1 cup passion fruit leaves, very finely chopped
2 curry leaves
1 garlic clove, grated
1/2 teaspoon ginger, grated
1 onion, finely chopped
1/2 cup reef fish, finely chopped
2 green chillies, thinly sliced
A little salt
A little sunflower oil
Method
Put a pan on the heat and add a little oil.
When the oil is hot, add the onion, chillies and curry leaves together.
Stir with a spoon on low heat until the onion is soft.
When the onion is soft, mix in all the remaining ingredients except the rice.
When they are browned, mix in the rice.
