Octopus garudhiya is a light, clear broth of octopus simmered with onion, curry leaf, pandan and dried chilli. The octopus is boiled until tender first, then cooked again in fresh water with the other ingredients.

Ingredients

  • 3 cups chopped octopus

  • 1 onion, finely chopped

  • 1 curry leaf

  • 3 pieces pandan leaf, cut into 1/2 inch pieces

  • 3 dried chillies, cut into pieces

  • A little salt

Method

  1. Put the pot on the stove, add water and bring it to the boil.

  2. Cook the octopus until it is tender, then pour off the water.

  3. Add water again and add all the ingredients together.

  4. When it has cooked enough for the flavour to come out, take it off the heat.
