Bokibaa is a Maldivian baked cake, and this savoury version is made with kandoo, the fruit of the mangrove, ground together with smoked tuna, onion and chilli.

Ingredients

  • 2 cups boiled kandoo, mashed

  • 2 onions, finely chopped

  • 3 curry leaves

  • 2 githeyo chillies, finely chopped

  • 1 teaspoon ginger, crushed

  • 2 limes

  • 3/4 cup rice

  • 1 1/2 cups valhoamas (smoked tuna), finely chopped

  • A little salt

Method

  1. Grind the onion, chilli and curry leaves together.

  2. Then grind in the lime, grated coconut, fish and all the remaining ingredients.

  3. Add 1/2 cup water and grind well.

  4. When it is ground enough for the flavour to come through, oil a tray.

  5. Put the ground mixture into the tray and bake in the oven.
