Faroshi, the crisp Maldivian rusk, is crushed and mixed with sugar, egg and coconut milk, then baked into a soft, sweet bokibaa.

Ingredients

  • 30 cups faroshi

  • 2 cups sugar

  • 2 eggs

  • Wheat flour and cold water

  • 1 coconut milk

Method

  1. Crush the faroshi finely.

  2. Mix the eggs, sugar and faroshi well.

  3. Add the wheat flour, the cold water (2 spoons) and the milk, and knead.

  4. When you press it in your hand, no trace of faroshi should remain on your hand.

  5. Grease a pan or a cake tray well with oil and pour in the batter.

  6. Bake it with heat from above, or in an electric oven.

Tips

  • Adding a little vanilla essence (1 bottle cap) makes it taste much better.
